Why do we need a Motor Stuff section Huck? The Ascot V-Twin is damn near bullet proof!
Well, ok, maybe this a good place to post "what brand of oil do you run?"
Well?

Well, there will always be some members that will want to "hop up" the engine, and any other stuff, like oil, as you mentioned, and air filters, spark plugs, clutches, ect.....just to keep it separate from the general chat

When is the last time you serviced your coolant? Presuming your radiator is full and your recovery tank is operational? Could be a faulty thermostat--have you checked it? You might want to join this Yahoo group for Honda Ascots too--many more members. Unfortunately this Board set up by Huck never took off, but was a great idea. autos.groups.yahoo.com/group/ascotvt500enthusiasts/Chris

Ive been told that the Coolant overflow caps on our steads are notorious for going bad and causing this to happen. Mine acts the same way. In traffic it'll run right up to the red. It wont go in the red though. Ive always been told not to worry about temp gauges until they are in the red.
What kind of oil are you running in it? And when was the last time you changed it?
